Morning Glory Muffins


I always loved coming home from school to these as a snack. They make your whole house smell good and they're so yummy your kids won't even know how good they are for you!

Ingredients

* 2 cups flour
* 1 cup sugar
* 2 teaspoons baking soda
* 2 teaspoons ground cinnamon
* 1/4 teaspoon salt
* 2 cups shredded carrots
* 1/2 cup raisins
* 1/2 cup chopped walnuts/pecans
* 1/2 cup unsweetened flaked coconut
* 1 apple - peeled, cored and shredded
* 3 eggs
* 1/2 cup vegetable oil
* 1/2 cup applesauce
* 2 teaspoons vanilla extract

Directions

I've never been very good at following all the directions in baking, so I just put all the ingredients in my mixer, mix until just blended (will be very thick and chunky) and then spoon into greased muffin tin or line with paper muffin liners.

Bake at 350 degrees for about 20-25 minutes, until a toothpick inserted into center of a muffin comes out clean. Makes approx 12 muffins.
